Singaporean Prosperity Toss "Yu Sheng" 星加坡式 魚生撈起

Yu sheng, or Prosperity Toss, also known as "lo hei" is a Singaporean raw fish salad served during Lunar New Year. It consists of strips of raw fish, mixed with shredded vegetables and sauce (usually plum sauce), where each type of ingredient has its own auspicious meaning.


For 6 persons

6人份量


Ingredients:

Raw salmon (sashimi) 8 slices

Cucumber 1 piece

Carrot 1 piece

Daikon 1/2 piece

Pomelo or grapefruit 1/2 piece

Crushed peanuts small amount

Sesame seeds small amount

Pok chui crackers small amount

材料:

三文魚刺身 (年年有餘) 8片

青瓜 (青春常駐) 1條

紅蘿蔔 (鴻運當頭) 1條

白蘿蔔 (風生水起) 1/2個

金柚 (大吉大利) 1/2個

花生碎 (金銀滿屋) 適量

白芝麻 (生意興隆) 適量

薄脆餅乾 (翩地黃金) 適量


Sauce:

Koon Chun Thin Soy Sauce 1 tsp

Koon Chun Sesame Seed Oil 1 tsp

Koon Chun Plum sauce 2 tbsp

Water 1 tbsp

Lemon juice 1 tbsp

調味:

冠珍生晒頭抽 1茶匙

冠珍芝蔴油 1茶匙

冠珍蘇梅醬 (甜甜蜜蜜) 2湯匙

凍滾水 1湯匙

檸檬汁 1湯匙



Instruction:

1. Wash, peel, and shred all vegetables into strips. Peel and separate the pomelo into segments.

2. Mix soy sauce and sesame seed oil together with raw salmon. Mix plum sauce, water, and lemon juice together.

3. Assemble the dish by placing the raw salmon in the middle of a round plate. Plate each type of vegetables, crackers, and pomelo meat around the raw salmon.

4. Sprinkle peanuts and sesame seeds on top. Garnish with the mixed plum sauce.

做法:

1. 把各蔬菜洗淨後去皮刨絲,金柚剝皮取肉待用。

2. 把頭抽,芝蔴油與三文魚刺身拌勻。把梅醬、檸檬汁及水拌勻。

3. 把三文魚刺身放在圓盤中央。蔬菜、金柚、花生碎及餅乾環繞刺身圍一圈。

4. 灑上芝麻,淋上調好的梅醬即成。
