海鮮醬 Hoisin Sauce

海鮮醬俗稱甜醬,其風味獨特、豉味濃郁。尤其用於醃製肉類、燒烤,可提升食材其鮮味,適用於乳豬、北京填鴨及海鮮蘸點進食,味道令人再三回味。

 

海鮮醬雖有「海鮮」二字,但醬裡不含海鮮。可能古代人用此醬來點海鮮而得其名。

 

冠珍海鮮醬選用加拿大非基因改造一級黃豆,麵粉經傳統醱酵後,調合米醋、紅辣椒、香蒜、食糖、及天然香料等原料煮製而成。不含防腐劑及人造色素、無添加味精或増味劑。

 

Also known as “sweet bean sauce”, our Hoisin Sauce differs from others as we put in quality Canadian soya bean to prepare the sauce. Unlike other companies, we do not add any food coloring into our Hoisin Sauce, thus it retains a natural fermented earthy color. It has a unique smoky and sweet flavor that is best served as dip for Peking Duck, Barbecue Pork (Char Siu), Crispy Aromatic Duck Wraps, Mook Shu Wraps, and Crispy Lettuce Wraps. It is an excellent sauce for grill and marinade seafood.

 

The literal translation of “Hoisin” is “seafood”. However, Hoisin Sauce contains no seafood. The name has such reference might because Cantonese used this sauce to dip steamed shellfish back in the old days.

 

Vietnamese likes to use our Hoisin Sauce in their dishes, as it tastes very similar to their sweet sauce equivalent - Tương đen.

柱侯醬 Chee Hou Sauce

精選加拿大非基因改造一級黃豆,麵粉經傳統醱酵後再加入香檸、香蒜、梅、香料及芝麻醬等原料煮製而成。

 

其豉味香濃,入口醇厚甘滑,是風味絕佳之上乘醬料佳品。用於烹調、燜製牛腩、雞、鵝、鴨及肉類,風味獨特、惹味香口,非一般柱侯醬所能媲美。

 

不含防腐劑及人造色素、無添加糖精、味精或増味劑。

 

Also known as “che hau” or “chu hou” sauce, Chee Hou Sauce is well-known in Hong Kong households as an essential ingredient for the famous Cantonese-style Braised Beef Briskets with Turnips. It marinades well with root-type vegetables and red meat and brings out the vinegar, sesame, and garlic ingredients within Koon Chun’s Chee Hou Sauce.

原晒豉 Bean Sauce

原晒豉俗稱麵豉醬,原粒原味,豉味特別濃郁、香味溢出的層次極佳,質感厚實味鹹,多用於醃肉、烘烤、蒸、燜、煲等用途;如蒸排骨、鯇魚腩或豆腐,味道令人再三回味。

 

此醬採用精選加拿大非基因改造一級黃豆,麵粉,經傳統醱酵長時間曬製,再加上麻油煮製而成。不含防腐劑及人造色素、無添加味精或増味劑。

 

Also known as “yellow bean paste” or “salted yellow soybean sauce”, Koon Chun’s Bean Sauce is a paste-like, brown soya bean sauce made from fermented soya beans and sesame oil. Cantonese chef and housewives especially like to use this sauce in steamed fish and stewed meat dishes. It also adds a subtle and flavorful taste to snow peas, sweet peas, and green beans.

磨原豉 Ground Bean Sauce

加工磨製後,因而醬身幼滑,豉香濃郁,用途廣泛,是廣東式燒臘不可少之醃料,適用於任何炒、燜、煮烹調菜式,磨豉香味能令菜式滋味無窮,份外鮮美。

 

採用精選加拿大非基因改造一級黃豆,麵粉,經傳統醱酵後,再加入天然香料煮製而成。不含防腐劑及人造色素、無添加味精或増味劑。

 

This sauce is the mashed version of our Bean Sauce. All the fermented soya beans are mashed to paste in the Ground Bean Sauce. Some chefs prefer this mashed version as it mix well into their marinade dishes.

燒烤醬 Barbecue Sauce / 燒排骨醬 Barbecue Sauce

精選加拿大一級非基因改造黃豆,麵粉,經傳統醱酵後再調入米醋、頭遍抽、茄汁及天然香料等原料煮製而成,蜜味香甜、開胃惹味,是烤製肉類的最佳配搭。

 

不含防腐劑及人造色素、無添加味精或増味劑。
